One of the special features of the Haranea farm is that it supplies its good products directly to the Haraneko borda farm inn restaurant. Kintoa Basque pork breeder and refiner

Christian Aguerre raises Basque pigs outdoors on his farm for eighteen months, thus respecting the specifications of the AOC Kintoa. The pigs' diet is a clever mix of pasture and other forest delicacies, and a supplement with wheat, corn, barley, rapeseed and sunflower meal.

A Slow Food Sentinel for several years, Christian Aguerre is an ambassador for respectful peasant agriculture and the breeding of the endemic Kintoa breed. He recently joined the Idoki farm charter.

Kintoa Ham

There are currently two Kintoa ham dryers, one is the collective dryer for all producers and is located in Aldudes, the other is that of Christian Aguerre. Needless to say, Christian Aguerre is a virtuoso of maturing, one of the best producers of Kintoa ham in the Basque Country. The duration and quality of the maturing process have a lot to do with it.
