Elorri Aizager
A shepherdess and farmer who settled in early 2020, Elorri Aizager from the Murgia farm took over from her father on the family farm in Ossès, Ortzaize in Basque.
The Murgia farm is in organic farming
Lambing takes place in the spring, milking is done by hand and the cheese is made when the grass is growing.
Basque cheese
Elorri produces organic pure sheep's milk Basque cheese and also summer cheese. The Murgia farm is organic and adheres to the idoki charter.
Black-headed Manex and Pireneika breed
The breeds present on the farm are the black-headed manex and the pireneika goat (whose first cheeses will arrive in spring 2021).
