Michel and Patrick Dagorret are among those men who, through the fine analysis of their past experiences and their convictions, contribute to supporting weakened breeds, and guide us collectively towards a thoughtful, meaningful, virtuous agriculture. We do not forget Bénédicte, Patrick Dagorret's wife, who pampers the ducks with care worthy of the best spas (wax, hand hair removal, etc.) and assumes the role of family ambassador to the chefs of the best restaurants in the region, some of which are starred, such as L'auberge Basque by Cédric Béchade, 1 Michelin star, or the restaurant Les Rosiers by Stéphane and Andrée Rosiers MOF, 1 Michelin star.

Know-how and convictions

Michel and Patrick Dagorret are recognized for their expertise in breeding Basque Kintoa pigs, but especially for breeding Kriaxera ducks sought after by starred chefs in the Basque country.

A Slow Food Sentinel for several years, Patrick Dagorret is the voice of respectful peasant agriculture and the breeding of the endemic Kriaxera breed.

Local and rustic, the Kriaxera is a breed perfectly adapted to the terroir. It lives freely in the farm's meadows. The Criaxera mulard is a cross between the Kriaxera duck and a Barbary male. Michel and Patrick Dagorret have dedicated themselves to breeding females intended solely for meat production. Males are preferred for the production of foie gras and other preserves.

Breeding that respects nature and animal welfare

Taken care of at 1 day, Kriaxera ducks are first fed with a natural mixture of local cereals until the age of 4 weeks. Then they start to feed on grass while having a reduced cereal supplement until 12 weeks when they reach their perfect stage of maturity, a guarantee of firm and tasty meat. Thanks to the choice of this perfectly adapted breed and to a breeding that respects animal welfare, the Kriaxera ducks of Patrcik Dagorret and Michel Dagorret do not receive vaccinations or other antibiotics>

The whole family prepares the ducks by hand

A true family team effort, all the Kriaxera cane preparation operations, from slaughtering to hand finishing, are carried out as a family on the farm in modern facilities that meet the latest standards.
