Storage and tasting tipsIdeally, this summer cheese should be kept in the pantry in a cool, dry room at around 15°C. It will keep for more than 3 or 4 weeks. If you have no choice but to keep it in the refrigerator, place your summer cheese in a cloth in the vegetable drawer. In this case, we strongly recommend that you take the summer cheese out 1 hour before tasting it so that it regains all its organoleptic qualities. You can enjoy this summer cheese accompanied by fig jam, Itxassou black cherries, wedge jelly, etc. and washed down with white or red wine, or simply on its own or with good bread.
Summer sheep cheese
The milk used to make this summer cheese comes from the local Manex tête noire breed of sheep. This summer cheese is matured for 8 months. Milking is done by hand.

This organic raw milk sheep's cheese was made by Elorri in the mountains during the summer period in the traditional way and exclusively from the milk of its black-headed manex sheep.
