Storage and tasting tips
Ideally, as enlightened amateurs and Jean-Bernard Maitia will confirm, this cheese should be kept in the pantry in a cool, dry room at around 15°C. It will keep for more than 3 or 4 weeks. If you have no choice but to keep it in the refrigerator, place it in a cloth in the vegetable drawer. In this case, we strongly recommend that you take the cheese out 1 hour before tasting it so that it regains all its organoleptic qualities. You can enjoy it accompanied by fig jam, Itxassou black cherries, wedge jelly, etc. and washed down with white or red wine, or simply on its own or with good bread.
