An exceptional Kintoa ham, the result of a minimum of 24 months of maturing and ancestral know-how.
Wonderful aromas of hazelnut, butter, undergrowth, melting texture where the marbled fat brings strength and roundness, make this ham a true grand cru with flavors of the Basque Country and exceptional aromatic complexity.
A deep red, Kintoa ham is marbled with a white to pinkish color to the fat.
ORIGIN OF KINTOA
TIME, THE SEAL OF KINTOA EXCELLENCE
The Kintoa pig is a black Basque pig raised in accordance with the specifications of the AOP/AOC Kintoa. Christian Aguerre raises his pigs outdoors on his farm in Itxassou. The pigs' diet is a clever mix of pasture and other forest delicacies, and a supplement with wheat, corn, barley, rapeseed and sunflower meal.
MAKING KINTOA HAM
This grand cru ham comes from the breeding and processing of Basque Kintoa pigs according to the rules of the AOC. Each Kintoa ham is hand rubbed with a subtle blend of salt from Salies de Béarn and spices including the famous Espelette pepper. Its slow maturation in the winds of the Basque mountains in Christian Aguerre's personal drying room patiently produces a remarkable Kintoa ham with a characteristic aroma.
KINTOA HAM TASTING
We recommend cutting this Kintoa ham with a ham knife, into thin slices. To fully appreciate this "haute couture" ham, you also need to give it time. The Basque black pigs were given the time needed to obtain high-quality meat. The Kintoa ham was given time to mature naturally. Give the ham time to melt in your mouth, the flavors to coat your palate to appreciate all its richness and finesse.
PRESERVATION OF KINTOA HAM
Your piece of Kintoa ham is delivered to you vacuum-packed. Once opened, store it if possible in a ham bag in a cool, airy place, brushing the opened part with a little lard or oil.
