When our ancestors prepared pork on the farm, part of the pork meat was eaten fresh, like the boudinettes that were grilled on the embers in the fireplace..., part was salted like sausage or ham and finally the last part was slowly preserved in lard in large terracotta pots. They could thus enjoy all year round with good preserved pork shanks for example. This recipe is a great classic of the Basque Country regional cuisine that reminds us of our childhood.
