For this recipe, you will need vacuum-packed octopus, but also potatoes, pimenton, mild or spicy according to your taste, extra virgin olive oil, and fleur de sel. Cook your potatoes in a warmer. Once your potatoes are ready, cut the vacuum-packed octopus tentacles into slices of 1 cm maximum and reheat them for a minute and a half in the microwave.
Arrange the potatoes and octopus escalopes on a board or plate and season with a pinch of pimenton, fleur de sel and a drizzle of good extra virgin olive oil. To enhance the quality of our sous vide octopus in this very simple recipe for Galician octopus, we recommend using Artajo 10 Coupage or Manzanilla olive oil and Añana fleur de sel. octopus salad
In summer, we always appreciate a good fresh octopus salad as an aperitif or starter. For this recipe, ideally, it should be prepared the day before so that all the flavors of all the ingredients are enhanced by the marinade.
For this octopus salad recipe you will need 2 vacuum-packed octopus bags, half a red onion, red and green pepper, spring garlic, parsley, yellow and green lemon, olive oil, salt and Espelette pepper. Dice the peppers, finely chop the onion and spring garlic, slice the vacuum-packed octopus. Mix everything together, add the marinade made with lemon juice oil, season and set aside covered in the fridge for 24 hours. To serve you can also add a diced tomato. Enjoy it all accompanied by a good crusty country bread and a good white wine.
