ORIGINS
Espelette Pepper (Ezpeletako biperra) officially appeared in the middle of the 17th century. Basque cooks then substituted it for pepper and used it for its delicate and powerful aromas. Visually, this recipe offers all the strength of the red color (Gorri). In the mouth, it is a unique flavor carried by a subtle marriage between the acidity of hibiscus and the spicy side of pepper. It is also an extraordinary combination of their respective benefits: an antioxidant cocktail, favorable against hypertension, cholesterol, fever, stomach pains and an antiseptic drink useful to fight against all infections.
TASTING
Quantity Approximately 12 to 15 g per litre (i.e. a very large tablespoon!) or more or less if you prefer!
3-5 mins: time to decide whether to cut a square of chocolate with Espelette pepper to accompany your tea…
Water temperature: 100°C, this is the temperature of the water in your kettle...not the tasting temperature :)
Recommendation: Store in a cool, dry place and consume quickly after opening.
