Txistorra is one of the specialties of the Basque Country and more particularly of Navarre in the southern Basque Country.
The Basque word "txistorra" or "txistor" means "sausage". The txistorra would originate from Guipuzcoa, where there is an area, in Lodosa, where the txistorra acquires a different name and is now called "birika". The txistorra would later spread to other Basque provinces, to be now known as Txistorra de Nafarroa.
A good txistorra is made with dewlap (Like bacon, dewlap is a piece composed mainly of intramuscular fat extracted from the animal's neck.), lean pork, garlic, salt and paprika.
Txistorra is eaten fried, grilled on the barbecue, in a sandwich, in a taloa or accompanied by fried eggs.
We have chosen for you the Txistorra prepared by hand by Ezkurtxerri. EZKURTXERRI is a family business in Getaria dedicated to the breeding and processing of pork products. The products are high-end products of artisanal manufacture. The pigs live in complete freedom from birth and feed on acorns, tubers and mushrooms, which form the basis of their diet, which is supplemented with cereals.
Two breeds of pig are raised on the farm. A Pietrain x Duroc cross and the Basque Euskal-Txerria pig. The Pietrain breed is the only one that produces lean meat, with the ratio of muscle weight to carcass weight being the highest of all known breeds; however, the Duroc breed is characterized by its rusticity and by the production of meat with a high degree of fat infiltration. Therefore, with this cross we obtain a high quality pig. Due to their free mobility and natural diet, as well as the little contact with humans, the pigs have a markedly wild and independent character, and this is why the fattening period is 9-11 months. The Euskal-Txerria is a rustic breed, which is fed freely. It is a slow-growing pig that is slaughtered at over a year old and weighs 160-180 kg. These pigs have a high fat content which gives tasty meats of very good quality. At the moment the products are not yet prepared with the Euskal-Txerria breed because the pigs are still growing. However, in the near future we will launch a range of high-end products in limited edition.
