DEVELOPMENT
Ochoa Lágrima Rosa is a wine made using the traditional "saignée" method with grapes from organic farming. The "saignée" consists of keeping the must in contact with the solid parts (skins) for a short period of time (4-6 hours), to then pass into a vat where it ferments with temperature control at 18ºC.
TERROIR
The vines used to make OCHOA Crianza are grown on the El Bosque plot (Traibuenas).
SITUATION
Finca El Bosque (Traibuenas) 38.1 hectares of Moscatel de Grano Menudo, Cabernet Sauvignon and Garnacha. The clay-calcareous soil and the southern orientation guarantee good exposure to the sun, which reduces the need for treatments in the vineyards, and promotes an integral viticulture, respectful of the environment. The low amount of organic matter in this soil means that yields are low.
