Related to the Navarrese stews, and produced mainly in Sangüesa, Pamplona, Tudela, Tafalla, Vera de Bidasoa and Lumbier, pochas are a variety of white beans consumed before maturity. By shelling the fresh pods, we obtain pale green beans, a paleness which suggested the name pochas.
It is a tender, fine and fresh bean , of which there are two varieties in Navarre, the elongated native variety, and the round variety. From San Fermin onwards, they appear on Navarrese tables, reaching peak season in August . They are excellent, simply stewed, without meat, but accompanied by some green peppers in vinegar. Here preserved naturally, these canned pochas make them an entirely natural product without losing any of their flavour.
